We asked people across UBT to share their favorite meals on a budget — and now we’re sharing them with you!
For this round of UBT Budget Bites we're utilizing day old rice and giving it a second act as an entirely new meal. Fried rice is a great way to use leftovers while sneaking in some extra protein and even a few veggies. Fisher, a Personal Banker at our N. 27th street location, was kind enough to show us one of his staples.

Chicken Fried Rice
Total cost of meal: $23
Fried Rice Ingredients:
- 1 ½ tablespoons of safflower or other high heat oil
- 3 ½ cups of rice ($3.39 per bag)
- 5 eggs ($2.49 per dozen)
- 1 ½ pounds of skinless chicken breast ($7.15)
- 1 large white onion ($.95)
- ½ cup green onion ($.88 per bunch)
- ½ cup finely diced carrots ($1.98 per bag)
- ⅔ cup sesame seeds (optional)
- salt and ground black pepper to taste
- soy sauce to taste
Garlic Butter Sauce
- 2 sticks of room temperature butter ($4.46 per pound)
- Juice of one lemon ($.99)
- 6 garlic cloves, finely diced ($.50 per head)
1) Add safflower oil to large frying pan or wok
2) Add 2 tablespoons of pre-mixed garlic butter to chicken and add to pan with hot safflower oil
3) Season chicken with salt and pepper, add eggs to side of pan and gently mix
4) Saute onions, green onions, and carrots together with chicken
5) Combine day-old rice with all ingredients adding three spoonfuls of garlic butter once ingredients are evenly mixed
6) Add 3 tablespoons of soy sauce until all rice is light brown in color
7) Once ingredients are fully mixed add about ⅔ cup of sesame seeds and more black pepper and salt to taste. Mix and enjoy!
